PODERE PAVOLINI
For three generations my Terzoni family has been cultivating their own vineyards on the hills of the upper Val d'Arda in Località Paolini di Bacedasco Alto, in the municipality of Vernasca (PC), where the winery and the agricultural company are also located.
The company was led for over half a century by my father Luigi who, according to the customs of the time, produced and marketed wines of that era, mostly loose in demijohns.
In the 1980s I returned from Alba (CN), where I obtained a diploma as an wine technician and, applying the new theories and knowledge acquired, I
was promoted to field oenologist (law 10 April 1991, N. 129). Passion
transmitted from father to son and the spirit of innovation have merged into a single objective: to enhance the typical grapes of the area, little known to large crowds, but always appreciated for the production of excellent quality wines.
I'm talking about Malvasia di Candia Aromatica, Ortrugo, Fortana and Bonarda.
My father also left me the task of taking care of the vineyard and today, with love and parsimony, I dedicate my time to the work of almost 5 hectares, located on lands with slopes varying from 5 to 12% and heights between 200 and 250 meters above sea level.
I produce around 30,000 bottles of wine per year, divided between white and red wines, mainly classic method sparkling wines and refermented in the bottle, but also still wines and a passito wine.
With the desire to experiment and the urge to understand, I have accumulated considerable experience, also gained thanks to collaboration with great oenologists and curious researchers. This wealth of acquired knowledge is the basis of the personality and quality of Podere Pavolini wines, appreciated and recognized far beyond provincial borders.
